Ingredients

300 grams flour
1 1/2 tsp salt
3 eggs
1/3 cup water plus more to achieve a thick batter consistency
1 large onion
150 grams mixed cheese such as Gruyère or Appenzell

Method

Combine the flour and the salt

Combine the eggs and the water in a separate bowl and add to the flour mixture

Add enough water to achieve a thick batter consistency. You are going to have to be able to get it through the holes of a colander so remember this when adding your water. I had to add quite a bit.

Cover the batter with a cloth and let it rest around 30 minutes.

In the meantime cut the onion in half and then cut each half into thin half rings. Fry up the onions until they are lightly browned.

Bring salted water to boil in a pot.

Put the batter in a colander and push through the holes into the water with a wooden spoon.

When the dumplings come to the surface remove them and drain them in a sieve.

Put the dumplings in a bowl and add the cheese.

Add the fried onions and enjoy.
