The cheese is best stored in our temperature and humidity controlled maturation room! That’s why we recommend you to buy the cheese just shortly before you need it, so we can ensure maximum flavor and freshness.

Once you have the cheese at home, store it in your fridge. If you buy cheese in wheels, leave the cheese in a cool and humid storage room such as an old stone cellar. If you haven’t got one and buy cheese in portions, open up the vacuum pack on the “thick side” of the pack, take the cheese out for consumption but put it back in the bag and store it in a cheese compartment in your fridge. Close the bag by flapping the end or wrap the cheese in glad wrap. If you leave the cheese open in the fridge it will dry out and crack. Keep the cheese airtight, to prevent the cheese from losing moisture.
