The wine: A full-bodied shiraz, showing notes of blackberry, mocha and pepper, supported by supple tannic astringency against a background of vanillin oak.

The cheese: strongly flavoured, raw milk cheese from the Swiss Alps with a slightly granular, creamy texture. In the mouth it displays flavours of honey, caramel, and walnuts.

The match: The wine’s lifted ripe berry characters complement the piquancy of the cheese and enhance its nutty flavours. The combination of dryish wine tannins and the cheese’s graininess provides an underlying and very satisfying mouthfeel.

The wine: A dry, medium-weighted red displaying the distinctive blackcurrant intensity of the grape and a hint of mintiness. Its balance of fruit, fine tannins and elegant French oak lead to a pleasing, persistent aftertaste.

The cheese: an aromatic bouquet with subtle scents of cashew nuts and alpine herbs. Its flavour is mature and tangy, along with a hint of butterscotch-like sweetness.

The match: the front of the palate the dry wine sets off the slight sweetness of the cheese, developing into a complex, savoury blend at the finish

FROMART Swiss Gruyere Classic with SIRROMET Signature Collection 2008 Chardonnay

Region: Granite Belt, Australia

Wine type: Chardonnay

Vintage: 2008

The wine: A medium-dry, multi-layered white showing a nose generous with apricots, melon and toasty oak. The palate continues with ripe stone fruits, a hint of lime and a mineral edge.

The cheese: The nose shows some pungency but this is tempered by aromas of creamy toffee and fruitiness. The palate is rich and full, showing roast almonds, mushrooms and a little earthiness. Its texture exhibits a pleasant “crunch”.

The match: Both components present abundant flavour profiles that augment rather than clash with each other. The result is a rewarding balance of fruit from the wine enhancing the rustic essence of the cheese.
