Gruyere Extra Mature is an aged raw cow’s milk cheese from the North Eastern part of Switzerland. It has an aromatic bouquet with subtle scents of cashew nuts and alpine herbs.
In the mouth the cheese is smooth, chewy and supple in texture with a slight crunchiness. Its flavour is mature and tangy yet distinctively sweet. The aftertaste is savoury and mildly sharp.
Serve with a pinot noir or a shiraz. Use with other cheeses for a hearty winter warmer fondue or serve with wine jelly and dry figs.
