Tilsit is one of the most popular cheeses in Switzerland. The Tilsit has a pale russet rind and is semi-firm in texture with a springy surface. It is a rich buttery yellow in appearance, with sparse, lentil-sized holes.

In the mouth its texture is creamy, pliable and rounded.Tilsit has a fragrant bouquet with attractive caramel notes and aromas reminiscent of cashew nuts and melted butter.

Tilsit flavours are a delicate mix of the sweet and nutty. There is a faint tang of cultured buttermilk. with hints of stone fruits and a fresh spiciness that leads to a mildly salty finish. As Tilsit continues to mature in your refrigerator it will became more aromatic and stronger in taste.

On the plate: Serve it cool but not cold – with a green salad, or as part of a luncheon platter with pickles. Accompany the cheese with water biscuits or sourdough or rye bread.

Tilsit is an excellent cooking cheese and can be used in sauces, with pasta, and in fondues. It will enhance simple supper dishes such as Welsh rarebit, toasted cheese sandwiches and grilled cheese on toast.

Try with sparkling wine, viognier, unwooded chardonnay and pinot grigio. Tilsit also harmonizes nicely with pinot noir, rosé, Chianti and Beaujolais. Or serve with an imported German lager or Coopers Pale Ale.
