Goes well with Pasta, mashed potatoes or polenta. 


350 g minced meat
100g veal sausage meat
1 onion, finely chopped
1 glove of garlic, crushed
40 g celeriac, finely grated
75 g Sap Sago, finely grated
3 table spoons fresh breadcrumbs
1 table spoon parsley, finely chopped
1 egg, whisked
ground pepper
butter (for frying)
8 slices of alpine cheese, approx 150 g
flat leaf parsley to garnish


Mix the minced meat, susage meat, onlion, garlic, celeriac, Sap Sago, breadcrumbs, parsley and egg, and season
Knead with your hands until mixture has an even texture
Shape into 8 patties of equal size
Fry in batches for 3 - 4 minutes on each side
Keep warm in pre-heated oven (70C) until all patties are done
Turn oven temperature to 120C
Put a slice of alpine cheese on each for the patties and leave to melt for around 5 min
